Can you? Yes, I know lots of people who daily their air-cooled VWs. Should you? Probably not.
Financially speaking - You're not getting much more than 10 MPG in stock form with an RS Camaro and it's REALLY tough to keep your foot out of it. That is part of the fun, after all. Insurance will be somewhat pricy, and a regular policy won't pay anywhere near what the car is actually worth if the worst happens. Collectors insurance will, but they won't insure a daily driver. Parts are available, sure, but the older a car gets, the harder it is to find the right repair pieces. Especially exterior and interior trim pieces.
Environmentally speaking - Emissions, especially if you're in CA, can be difficult to pass when everything is working right. It's even worse if parts are missing or failing.
From a safety standpoint it's not a great idea, but you've already had that explained to you.
That being said, you can absolutely have your cake and eat it too. Just include the purchase of a beater into your budget, and you'll be set. A relatively modern, more fuel efficient car that's cheaper to insure will go a long way towards increasing your ability to enjoy your classic on YOUR terms. There's a lot out there between $4k and $5k, and even less money if you're creative with your searching.
I say do it, any pre-80 car isn't growing on trees any more. Just be aware that owning and driving a 68 Camaro or any other classic will never be as inexpensive as you'd hope, whether it's a daily or a weekend warrior. But when you're driving yours, you'll no longer care what it cost.
